Simply Simpático

1/3 cup butter

1/3 cup brown sugar

1 cup flour

1/2 cup chopped nuts

1/4 cup sugar

8 ounces cream cheese, softened

1 egg

2 tablespoons milk

1 tablespoon lemon juice

1 teaspoon vanilla

Cream butter and sugar. Add flour and nuts and mix until crumbly. Reserve 1 cup of the mixture for topping. Press the remainder of the mixture in an 8” square pan. Bake at 350° for 12-15 minutes.

Blend sugar with cream cheese. Add egg, milk, lemon juice, and vanilla. Beat well. Spread over baked crust. Sprinkle remaining crumbs on top. Bake at 350° for 25 minutes. Store in refrigerator.

Yield: 16-25 cookies

Notes:

  1. Used crushed walnuts as that’s what I had on hand

  2. Waited a few days to cut these, and stowed them in the fridge

  3. The lemon seems out of place to me, and I’d likely leave it out next time
