Vegetable oil
6 large corn tortillas
1 cup refried beans
1 pound ground beef, browned
1 clove garlic, minced
1/2 cup minced onion
1 cup grated Cheddar cheese
1-1/2 cup shredded lettuce
1 medium tomato
1-1/2 cups guacamole
1/2 cup sour cream
Ripe olives
Fry tortillas one at a time in hot oil. Hold down center of tortilla with wooden spoon so that the tortilla becomes cup-shaped. Drain on paper towels.
Mix beans with salsa to taste. Spread each tortilla with bean mixture. Top with browned ground beef. Sprinkle with onions and cover with grated cheese. Place in 375° oven for about 10 minutes. (Use a cookie sheet or ovenproof plates.)
To serve, top each tortilla with lettuce and tomatoes. Spoon guacamole on top. Decorate with a spoonful of sour cream and ripe olive slices. Serve immediately.
Yield: 6 servings
1 large tomato chopped
1 medium onion, chopped
2 fresh green chiles, chopped (or 1 4-ounce can)
1/2 teaspoon garlic salt
1/2 teaspoon monosodium glutamate (optional)
Salt to taste
Combine all ingredients and chill, covered, in refrigerator at least one hour.
Guacamole Dip:
6-8 ripe avocados
1/2 cup chopped green chiles
1 garlic clove
1 teaspoon lemon juice
Salt to taste
Peel and pit avocados. Mash avocados with a fork. Stir in remaining ingredients. Serve with tostados or other chips.
Notes:
Since the recipe didn’t indicate where to use the garlic I added it to the beef when browning
