Simply Simpático

Meatballs:

1-1/2 pounds ground beef

6 tablespoons corn meal or 1 cup bread crumbs

2 eggs, beaten

2 cloves garlic, crushed

2 teaspoons ground coriander seed

2 teaspoons salt

1 teaspoon pepper

1/2 onion, chopped fine

Combine meatball ingredients and mix well. Shape into balls of desired size.

Soup:

4 tablespoons fat

2 tablespoons flour

4 cups hot water

2 tablespoons fresh coriander (cilantro)

Salt to taste

4 potatoes, cubed

Melt fat and brown flour in it. Add water and seasonings. When it starts boiling, drop the meatballs and potatoes into it and cook until meat is cooked and potatoes are tender, about 30 minutes.

Yield: 8 servings

Notes:

  1. Halved this recipe with great success

  2. For the fat I went with butter, and I opted to use cornmeal in the meatballs
