The Eastern Junior League Cookbook

1 large egg

1 12-ounce bottle chili sauce

1/2 green pepper, chopped

1 large onion, chopped

2 teaspoons Wocestershire sauce

1 tablespoon prepared mustard

2 tablespoons chopped fresh parsley or 1 tablespoon dried parsley

Freshly ground pepper

1 cup bread crumbs (optional)

1-1/2 pounds equal parts ground beef, pork, and veal

Bacon

Mix first ten ingredients together, adding meat last. Put in ovenproof casserole and cover top with bacon slices. Bake in preheated oven at 350° for 1 hour.

Yield: 4 servings

Notes:

  1. Used a mix of beef, pork, and veal & dried parsley as that’s what I had on hand

  2. Went with Heinz sweet chili sauce, and topped with three slices of bacon

  3. Only had a yellow pepper and an onion closer to medium size than large
