The Southern Junior League Cookbook

1 pound fresh crabmeat

4 tablespoons butter

2 tablespoons flour

1-1/2 cups milk

1/4 teaspoon salt

Juice of one small onion

Juice of 1/2 lemon

1 teaspoon Worcestershire sauce

1 teaspoon chopped parsley

Dash cayenne

1/4 teaspoon celery salt

2 eggs, well beaten

Buttered bread crumbs

Pick over crabmeat carefully to remove all bits of shell. Melt butter in heavy saucepan. Blend in flour; add milk and stir constantly over low heat until thickened. Add all seasonings. Add beaten eggs and stir; do not let boil. Mix sauce with crabmeat. Pour into greased baking dish. Top with buttered crumbs. Bake at 350° for 30-40 minutes.

Yield: 4 servings

Notes:

  1. Went with fresh crabmeat

  2. Used about a tablespoon of lemon juice & a small yellow onion
