Atlanta Cooknotes

Muffins:

18-1/2 ounce box Lemon Supreme cake mix

3-3/4 ounce package instant lemon pudding mix

1/2 cup vegetable oil

1 cup buttermilk

4 eggs

Glaze:
3 tablespoons fresh lemon juice

6 tablespoons fresh orange juice

1-1/2 teaspoon vanilla extract

3-1/2 cups confectioners’ sugar

Preheat oven to 350°. Mix muffin ingredients and pour into greased miniature muffin tins. Bake for ten minutes.

Mix glaze ingredients. Dip warm muffins into glaze and place on cake rack to drain.

Yield: 80-90 Mini Muffins

Notes:

  1. Only had 15-1/4 ounce cake mix on hand so adjusted the liquid ingredients accordingly

  2. Made buttermilk by pouring 1 tablespoon of lemon juice (or use vinegar) into a 1 cup, filling it the rest of the way with milk, and letting it sit 5 minutes

  3. Decided to do a mix of mini muffins, regular size muffins, and a small loaf
