Taquitas (Rolled Taco Appetizers)

2 pounds ground beef
1 medium onion, chopped finely
2 teaspoons salt
1 teaspoon black pepper
Dash hot pepper sauce
1 cup tomato sauce
1 cup medium sharp Cheddar cheese, shredded
12 corn tortillas
Cooking oil
Brown beef and onion until onions are tender. Drain off excess grease. Mix in the salt, pepper, hot pepper sauce, tomato sauce, and cheese and blend until cheese is melted. Prepare tortillas by dipping briefly in hot oil (three seconds per side). They should remain soft. Drain well on paper towels before filling with two level tablespoons of meat mixture. Roll up and secure with toothpick. Deep fry at 350° for two minutes or until crisp. Drain well. Serve with Mexican salsa for dipping.
