Chile con Queso

Simply Simpático
1 tablespoon of salad oil
1/4 cup minced onion
1 4-ounce can chopped green chiles, drained
1/2 teaspoon garlic, crushed
1/3–1/2 cup light cream or milk
1 8-ounce package pasteurized process cheese spread, cut in cubes
1 cup grated Cheddar cheese
Tortilla chips or fresh vegetables for dipping
In a small saucepan over moderately-high heat. Add onion, chiles and garlic and cook 5–7 minutes, stirring frequently, until onion is lightly browned. Reduce heat to low and add 1/3 cup of the cream; then add cheeses and stir until mixture is smooth. If necessary, thin sauce with additional cream. Serve in a small chafing dish with tortilla chips or fresh vegetable dippers.
Yield: 2 cups
