Scotch Shortbread

2 sticks butter
1/2 cup confectioners’ sugar
2 cups flour
1/8 teaspoon salt
1/4 teaspoon baking powder
Additional confectioners’ sugar
Cream butter and sugar. Sift together flour, salt, and baking powder. Mix all together into soft dough. Put in flat shortbread tube or cookie press and press out onto baking sheet. Or roll out 1/2 inch thick on floured board and cut with cookie cutters.
Bake at 325° for about 20 minutes, or until golden brown. Watch carefully, as they burn easily.
While hot, remove from baking sheet and sprinkle with powdered sugar. Store in air-tight container.
Yield: 6 Dozen

Added some lime zest and Thai basil flowers for flavor
Rolled the dough into a log and sliced as rounds
