Delaware Rice Pudding

The Eastern Junior League Cookbook
5 cups water
1/4 teaspoon salt
3/4 cup rice
3/4 cup sugar
1-13 ounce can evaporated milk
3 eggs, beaten
1/2-1 cup raisins
1 tablespoon vanilla
Cinnamon
Bring water and salt to a boil. Add rice and simmer until rice is nearly dry. Add sugar and evaporated milk. Bring to boil again. Add eggs, stirring constantly. Fold in raisins. Cool. Add vanilla and sprinkle with cinnamon on top.
Yield: 6-8 servings
Notes:
Really don’t like raisins in rice pudding so I opted to leave them out
