5 ripe bananas

1 18-1/2-ounce box Duncan Hines yellow cake mix

3 eggs

1 teaspoon vanilla extract

Optional: 1/2 chopped nuts

Preheat oven to 350°. In a large bowl, mash bananas and add remaining ingredients. With an electric beater, mix two minutes at medium speed. Pour into a buttered five by nine-inch loaf pan and bake one hour.

Yield: 10–12 servings

Notes:

  1. Added chocolate chips and chopped walnuts

  2. Used a mix of fully brown and yellow-brown bananas

  3. Tented with foil after a half hour of baking to keep the top from becoming too brown
