The Eastern Junior League Cookbook

1 cup milk

1 cup all-purpose flour

Dash salt

2 eggs

Mix all ingredients together by hand. Disregard lumps. (Do no use a mixer or popovers will not rise.) Pour into cold, greased muffin tins, filling each cup half full. Place in a cold oven. Set the oven to 450° and bake for 30 minutes. Serve immediately.

These are great for breakfast, brunch, or with roast beef.

Yield: 6 servings

Notes:

  1. Used an actual popover tin pan that I’d scored at an estate sale

  2. Mixed by hand (as instructed), using a whisk, until only smaller lumps left

  3. Despite liberally greasing the pan they still stuck quite a bit
