Old-Fashioned Hot Water Gingerbread

1/2 cup sugar
1/2 cup melted butter
1 cup molasses
1 egg
2-1/2 cups sifted flour
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ginger
1-1/2 teaspoons cinnamon
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1 cup boiling water
Combine sugar, butter, molasses, and egg and beat well. Sift together dry ingredients and stir into egg mixture. Lastly stir in the hot water.
Bake in two greased and floured loaf pans at 375° for 30-40 minutes, or until cake tester comes out clean.
Serve with a topping of whipped cream if desired.
Yield: 2 loaves
Notes:
Left out the nutmeg as I didn’t have any on hand
Halved this recipe with great success using one small egg
Poured the water in very slowly, and increased the speed of my stand mixer only once it was all incorporated, to limit splashes
