3 whole chicken breasts, split, skinned, and boned

2 eggs, beaten

1/8 teaspoon pepper

3/4 cup Italian bread crumbs

1/2 cup vegetable oil

2 cups tomato sauce

1 teaspoon basil

1/8 teaspoon garlic powder

1 teaspoon margarine

1/2 cup grated Parmesan cheese

1 8-ounce package sliced mozzarella cheese, cut into triangles

Pound each chicken breast to 1/4 inch thick. Combine eggs, salt, and pepper. Dip chicken in egg mixture, then roll in crumbs.

Heat oil very hot in large frying pan. Brown both sides of chicken quickly. Remove from baking dish. Pour off excess oil and combine tomato sauce, basil, and garlic powder in pan. Heat to boiling and simmer for 10 minutes, or until thickened. Stir in margarine. Pour over chicken and sprinkle with Parmesan cheese. Cover and bake in 350° oven for 30 minutes. Uncover, top with triangles of mozzarella cheese, and return to oven until cheese is melted.

Yield: 6 servings

  1. Used chicken thighs as that’s what I had on hand
