Ham and Broccoli Roll-Ups

5 thin slices of cooked ham

1 10-ounce package frozen broccoli spears, cooked and drained

1/2 cup mayonnaise

3 tablespoons flour

Dash cayenne

1-1/2 cups milk

1/2 cup shredded cheddar cheese

Fine bread crumbs

Roll ham around broccoli spears and arrange in shallow casserole.

In a small saucepan, stir together mayonnaise, flour, salt, and cayenne. Gradually stir in milk. Cover over low heat until thickened. Add cheese and cook, stirring until cheese is melted.

Pour cheese sauce over roll-ups, sprinkle with bread crumbs, and bake at 325° for 1/2 hour.

Yield: 5 servings

Notes:

  1. Used leftover sliced ham from Easter and leftover blanched broccoli & asparagus

  2. Whisked the sauce until thickened instead of covering

  3. Thought there was about twice as much cheese sauce as needed for my taste, and so doubled the ham rolls
