The Junior League of Buffalo, New York

The Eastern Junior League Cookbook

2 slices white bread

2 tablespoons soft margarine

2 eggs

With a small juice glass, cut a round circle out of the center of each slice of bread. Spread one side of bread with margarine. Place bread butter side up in a buttered frying pan and break an egg in each hole. When egg is set, turn egg and bread over and brown other side.

Yield: 1 serving

Notes:

  1. By “butter side up” I assumed it meant the margarine

  2. Did a couple grounds of fresh mixed peppercorns and sea salt

  3. Was out margarine so used butter instead for both the pan and the bread slice
