Out of Our League

1/2 cup butter OR margarine, softened

1 cup sugar

2 eggs

1 cup ripe bananas, mashed

1 teaspoon lemon juice

2 cups flour, sifted

1 tablespoon baking powder

1/2 teaspoon salt

1 cup pecans OR walnuts, chopped

1 teaspoon vanilla

Cream shortening and sugar together; beat eggs until light and add. Press bananas through sieve and add lemon juice; blend with creamed mixture. Add vanilla. Sift flour, baking powder and salt together and mix quickly into banana mixture. Add nuts. Bake in greased loaf pan at 350° about 1-1/4 hours.

Yield: 1 lb Loaf

Notes:

  1. Went with walnuts as that’s what I had on hand

  2. Didn’t bother with pressing bananas through a sieve, and just mashed them with a spoon before adding to batter

  3. Batter was quite thick, and the final texture is light and springy with a definite crusty top

  4. Tented with tin foil for the last ~20 minutes & removed when toothpick inserted came out clean
